Carrot & Raspberry Loaf | Guilt free treat

After request from you guys here's the recipe for this delicious loaf! I've baked this twice last week. It's really a treat that you can eat every day!

Carrot & Raspberry Loaf


  • 200g white flour

  • 80g wholemeal flour

  • 2 tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp ground cardamom

  • 1/4 tsp cloves

  • 1 tbsp vanilla extract

  • 3-6 tbsp of coconut sugar, honey, fruit syrup etc (depending on how sweet you want it)

  • 1 punnet of raspberries (frozen works too)

  • 2 eggs

  • 200-250 ml milk of choice (I used coconut milk)

  • 150-200g carrot pulp (if using a whole carrot, grated use 100-150g as the juice haven't been extracted from the pulp)

Mix dry ingredients in a bowl, mix the wet ingredients together and add it to the dry ingredients. Add the carrot in the end.


Butter a loaf pan and add the mixture in. Press down the raspberries in the loaf and sprinkle with oats.


Bake in the oven for 30-40 minutes on 200 degrees, or until the loaf is golden brown.

DINNER IDEA | Tasty and Nutritious Buddha Bowl

Happy Friday!


Remember the Buddha Bowl I shared with you a few days ago? Well, here is another version!


This one is so filling I could only finish half of it (and trust me I love my food), so this is ideal for the hungry men out there.

What's in the Buddha Bowl?


Turmeric and harissa brown rice

Boil brown rice with some turmeric (I used half a tsp for 2 servings)

When the rice is cooked, add 1 tbsp (for 2 servings) of harissa.


You can see it but there is fried yellow peppers and cherry tomatoes

Add some good quality oil in a pan with a minced clove of garlic. Fry the veg until soft, but still a bit of crunchiness in the peppers.


Black beans with melted cheese.

Add the rinsed black beans to a ovenproof dish and top up with any desired cheese (I used Manchego). its done when the cheese has melted.


Homemade hummus on sourdough bread

Sourdough is bought from the shop.

Hummus is made this way:

  • 1 can chickpeas, drained and rinsed

  • 100-200 ml extra virgin olive oil (good quality)

  • 1/2 lemon, juice

  • 1 garlic clove

  • Sea salt

  • Pinch of chilli flakes


Add everything in the blender and blend until smooth.


Grilled Aubergine.

Hemp oil on the griddle-pan and grill until cooked.


And add some rocket and avocado for extra greens.
