People always ask me - Do you not eat cakes, biscuits and sweets? My answer is always: Yes, I do. But the good kind. Well, not always but most of the time. And that is what counts. But I don't eat sweets, biscuits and cakes every week. That's the difference.
Living a healthy life - with healthy food, internal happiness, focus and pleasure doesn't mean it has to exclude delicious sweet treats and baked goods. My friend, life is to be enjoyed.
If you are going to have cakes, waffles, pancakes and all that make it yourself! Or go to your local bakery and get something that is made with good quality ingredients. The benefits of making it yourself is that you know what goes into it. As well, you can add healthier alternatives to sugar and it's actually a lot better for you. So you don't have to worry about the extra calories nor that its bad for you.
Fancy something sweet just now? Well here is a recipe you can try out that I created for
a company I work - LUHV DRINKS - for pancake day! But this recipe is the perfect meal for breakfast, lunch or brunch on the weekend!
(2 servings or 1 serving for a hungry man)
150g spelt flour or oat flour
2 tsp baking powder
1 tbsp coconut sugar
Dash of cinnamon
200-250ml coconut/almond milk (or other plant milk)
1 tsp vanilla extract
1 Tbsp coconut oil/real butter/hemp oil for the pan
4 strawberries sliced
A small handful of blueberries
1 Tbsp cashew nut butter
1 tbsp raw honey
Mix the dry and wet ingredients in separate bowls.
Combine and mix until you have a lump free batter.
Heat a frying pan over medium heat.
Lightly grease with butter or oil. Ladle the pancake batter into the pan.
Cook each pancake till bubbles appear on the surface and the edges have gone slightly dry.
Flip each pancake and cook for a minute or two on the reverse side, till golden brown.
